TUNA AND PASTA SALAD
CALIFORNIA MISO SOUP
CHEESY SAUCE

TUNA AND PASTA SALAD

225g Pasta (Rotini, shells, macaroni etc)
1 can Flaked Tuna
2 Celery Stalks chopped
1/2 cup Onion chopped (valdalia or red)
1 Pepper chopped (red, yellow or green)
1/2 Pint Cherry Tomato


Dressing:
1/4 cup Fat free Chicken Broth
1 tsp Olive Oil
1 tbsp Lemon Juice
1 tsp Prepared Mustard
1/4 tsp Dried Oregano
Ground Black Pepper to taste
Mix dressing ingredients.

Cook, cool and drain pasta. Combine pasta with other ingredients in large bowl. Pour dressing over salad and cool in refrigerator.
Serves 4.



CALIFORNIA MISO SOUP

Ingredients (for 2 servings)

-Heat 2 cups of water in a sauce pan (Do not bring to a boil) -Add a few slices of nori into the water (eatable seaweed) -Stir in 3 heaping tablespoons mellow white miso siluted in a small amount of water.

Place the following ingredients in a bowl:
-Spiraled sweet potato and succhini
-thin sliced carrot discs
-Sliced green onion
-Choped celery
-1/2 chopped avocado
-Snipped fresh parsley

Add all the vegetables and herbs from your bowl to the soup base, stir gently, season with herbamare*, and eat immediately.

Prep time 10 Min's.
Type and amount of vegetables can vary to taste
You can add crackers.

(*Herbamare- premixed seasoning made of Sea salt, celery, leek, watercress, onion, chives, parsley, lovage, garlic, basil, marjoram, rosemary, thyme and kelp.)



CHEESY SAUCE

2 cups water
1/3 cup carrot, peeled and cooked ( jarred version can be used )
2 - 3 Tbsp. cornstarch ( depending on thickness desired )
cup nutritional yeast
1 Tbsp. lemon juice
2 tsp. onion powder
2 tsp. salt ( optional )

Bring all ingredients together in a blender. Pour into a saucepan and stir till it boils and thickened. Can be enjoyed in Mac and Cheez, over veggies or potatoes.
