FAT FREE BANANA CAKE

BALSAMIC GLAZED STRAWBERRIES

FAT FREE BANANA CAKE

1/2 cup Applesauce (unsweetened)
1 cup Sugar
4 Egg Whites
2 cups Flour
1 tsp Baking Soda
1+1/4 tsp Baking Powder
1/2 tsp Salt
3 Bananas (average size)
1 cup Walnuts (finely chopped)

Cream apple sauce and sugar till smooth. Mix in egg whites. Mush bananas. Combine flour, baking Soda, baking powder and salt. Add to creamed mixture alternately with bananas. Mix in chopped nuts. Pour into lightly greased baking pan.
Bake in 350 degree farenheit oven for 60 to 65 minutes. Let cool before slicing.
Makes 1 loaf.






MILLET SQUARES

1 cup millet
4 cups water or juice of choice
1/2 cup dried fruit or nuts (raisins,goji berry,walnuts,cranberries, etc)

Bring millet and liquid to a boil, reduce heat and simmer for 1 hour, stir in fruit and nuts, press into a 9X9 in lightly oiled baking dish, let cool to set, bake at 350 deg F for 1 hour untill lightly browned, cool and cut into desired size squares. Enjoy.






PEAR SMOOTHIE

1 ripe pear, peeled, cored and cubed
1/4 cup orange juice
2 Tbsp lemon juice
1 Tbsp liquid honey
1 cup plain low fat, or no fat yogurt
1 cup crushed ice

In a blender mix all ingredients until smooth. Pour into 1 or 2 glasses and enjoy.






RASPBERRY PUREE

RASBERRY Sweet spices and a splash of balsamic vinegar add depth to this vividly colored sauce of pureed fresh raspberries. Stir it into yogurt or spoon it over fresh fruit.

Ingredients:
3 cups fresh raspberries
2 tbs honey
1 tsp balsamic vinegar
1/4 tsp ground cinnamon
1 pinch of ground nutmeg

Directions:
In a blender or food processor, combine all the ingredients and puree until smooth.
Pass the puree through a sieve placed over a bowl, pressing firmly on the solids with a spatula to extract all the juice. Scrape the inside of the sieve periodically to dislodge any seeds that may be plugging the holes. Keep pushing the pulp firmly through the sieve until you are left with a small number of seeds. Cover the puree and refrigerate until ready to use. Makes about 1 cup.

Serves 4






BALSAMIC GLAZED STRAWBERRIES

4 cups strawberries ( about 1 lb )
1 T sugar ( or natural alternative - stevia or agave )
1/4 tsp aged balsamic vinegar ( try blueberry or fig or raspberry )
Wash, dry, hull, and quarter strawberries lengthwise.
Combine strawberries, vinegar, and sugar, and toss gently to coat.
Refridgerate for 1 hour.

Serves 4
